*Prepare the mousse ahead of time. Let it set overnight or for a few hours in the fridge.
Coco Whip Pies- 6-7 servings
Raw Pie Crust:
1 cup almonds, walnuts or cashews
10 pitted medjool or deglet dates
1/3 cup shredded unsweetened coconut flakes
Toss everything in a blender or food processor and mix until well incorporated.
Press into cupcake tins and freeze for 10-15 minutes.
Coco Whip filling:
1 can of full fat coconut cream
2 heaping tbsp raw cacao powder
1 tbsp agave or maple syrup
3 tbsp chia seeds
Whisk all ingredients together and place in fridge overnight to set into mousse.
Immediately scoop out crusts by gently using a knife around the edges of the tin. Scoop mousse into crust cups and add toppings. Keep leftovers in the freezer to preserve the shape.
